Courgette Bhuna

 

Ingredients:

1 tbsp EV Rapeseed Oil or Vegetable Ghee

1 onion peeled and sliced thinly

1 tsp Ground Cumin

½ tsp mixed masala/curry powder

1 tsp Ground Coriander powder

½ tsp Ground Turmeric Powder

1 Fresh Green chilli sliced in half lengthways - leave seeds in

1 tbsp Kit’s Red Chutney

Courgettes washed and sliced thinly

1 Fresh tomato cut into quarters

Salt to taste

Fresh Coriander for decoration

 

Method:

Using a pan with a lid, place all the ingredients except the fresh coriander into the pan/pot in the order that they are listed, turn the heat on low and cover, don’t stir yet. After about 10mins the pot should have created its own liquid and the veg should be simmering. Cook for a further 10mins or until everything is soft, decorate with fresh chopped coriander and serve.
