Kit’s Quick Mushroom Bhaji with Red Chutney
Prep Time: 10mins Cooking time: 20mins Equipment needed: Frying pan with tight lid
Shopping List:
1 tbsp Butter Ghee (Clarified Butter) or 1 tbsp rapeseed oil (plant-based option)
1 onion – peeled and finely sliced
1 heaped tsp cumin seeds
250g sliced mushrooms
1 fresh hot red or green chilli – finely chopped
1 tsp ground turmeric
1 tsp mixed masala (paprika powder, chili powder, ground cumin, coriander powder, ground garam masala, ground turmeric mixture)
2 cloves garlic – crushed
1 tbsp Kit’s Red Chutney
1 fresh tomato – cut into quarters
Salt to taste (approx. ½ tsp)
1 handful fresh coriander – chopped
Method:
Away from the heat add all of the above ingredients except the fresh coriander but in the order listed (sounds weird but needs be). Place the lid on the pan and heat on a gentle heat. Don’t remove the lid for 10mins, then stir, replace the lid and cook for a further 10mins. By then everything should be nicely cooked, then add the coriander leaves and serve. Quick and easy.
