Slice a whole Cauliflower into 1cm wide slices, mix 1 tablespoon of Kit's Peanut Chutney with a tablespoon of Extra Virgin Rapeseed Oil, spread evenly over one side of the Cauli and bake on 180C (fan) for about 20mins and serve with a sprinkle of freshly chopped coriander and mint.
Baked Sweet potatoes, put a whole washed sweet potato into foil, place in hot oven for about 40mins or until soft to touch depending on size. In the meantime mix a tablespoon of Kit's Peanut Chutney with 3 tablespoons of coconut cream and chopped chives in a bowl and when the Sweet Potatoes are cooked, open the foil parcels make a slit in the potatoes and spoon the mixture in, decorating with some more chopped fresh chives. (Normal baked potatoes can be used too)
